Strawberry Pop-Tarts

If you are looking to make the recipe easier, the pie crust and jam can be substituted for store-bought versions!! My first time making these, I used store-bought pie crust, and it tasted just as good :)

Crust:

  • 2 ½ cups of flour

  • 1 tbsp sugar

  • 1 tsp salt

  • 1 cup of cold butter

  • ½ cup of ice water

Jam:

  • 1 carton of strawberries

  • ½ cup sugar

  • 1 tbs lemon juice

Icing:

  • 1 cup confectioners’ sugar

  • splash of milk

  • food dye (optional)

For the Crust:

  1. Start by combining the flour, sugar, and salt in a large bowl.

  2. Add the cold butter (cubed) to the bowl and use a pastry cutter or your fingers to combine until the butter is just incorporated (some chunks are okay; they allow the crust to be flaky).

  3. Slowly add water until a dough forms.

  4. Chill overnight.

For the Jam:

  1. Cup up the strawberries and mash until there are no large chunks.

  2. Place in a saucepan over medium-high heat, then add the sugar and lemon juice.

  3. Continue mixing until the jam thickens, then take it off the heat.

For the Pop-Tarts:

  1. Roll out the dough and cut into rectangles

  2. Place about 1 tbsp of jam onto a rectangle and cover with another piece of dough

  3. Use a fork to seal the edges, and poke small holes in the top of each pastry to allow steam to escape.

  4. (Optional) Brush the tops with an egg wash for a golden, shiny crust.

  5. Bake at 400 degrees for 15 minutes

For the Icing:

  1. Combine the confectioners’ sugar and milk until you reach the consistency you desire

  2. Once the Pop-Tarts are cooled, drizzle the icing on top
