Strawberry Pop-Tarts
If you are looking to make the recipe easier, the pie crust and jam can be substituted for store-bought versions!! My first time making these, I used store-bought pie crust, and it tasted just as good :)
Crust:
2 ½ cups of flour
1 tbsp sugar
1 tsp salt
1 cup of cold butter
½ cup of ice water
Jam:
1 carton of strawberries
½ cup sugar
1 tbs lemon juice
Icing:
1 cup confectioners’ sugar
splash of milk
food dye (optional)
For the Crust:
Start by combining the flour, sugar, and salt in a large bowl.
Add the cold butter (cubed) to the bowl and use a pastry cutter or your fingers to combine until the butter is just incorporated (some chunks are okay; they allow the crust to be flaky).
Slowly add water until a dough forms.
Chill overnight.
For the Jam:
Cup up the strawberries and mash until there are no large chunks.
Place in a saucepan over medium-high heat, then add the sugar and lemon juice.
Continue mixing until the jam thickens, then take it off the heat.
For the Pop-Tarts:
Roll out the dough and cut into rectangles
Place about 1 tbsp of jam onto a rectangle and cover with another piece of dough
Use a fork to seal the edges, and poke small holes in the top of each pastry to allow steam to escape.
(Optional) Brush the tops with an egg wash for a golden, shiny crust.
Bake at 400 degrees for 15 minutes
For the Icing:
Combine the confectioners’ sugar and milk until you reach the consistency you desire
Once the Pop-Tarts are cooled, drizzle the icing on top
